Recipe: Pork & Mashed Potatoes

If you like pork chops and mashed potatoes, try this quick meal for one....

Ingredients:

1 Pork chop (One thick cut chop is usually enough for one person)
2/3 Cups mashed potatoes.
A small glass of water.

Trim fat from pork and cut into small cubes.  1/2 to 1 inch a side.
Pre-heat frying pan over medium-high heat and add pork.
Let sit in the pan for a bit to brown well on one side.    Since they will stick to the pan a little, its easy to turn them with a spatula by just pushing them around.   As they cook, the pan will get hot and you may notice it starting to smoke.   This is where the water comes in.  Add a few tablespoons of water and start mixing things around the pan.   This will do a few things.  1) it will cool the pan.  2) it will help the pork cook more thoroughly, and perhaps most important:  3) It will get the juices dissolved and let them coat the pork.
Continue to stir until the water has boiled off, then arrange the pieces in the center of the pan and let it sit for awhile before repeating the process of adding water.   You'll do this three or four times.
Once you're sure the pork is cooked (if you have any doubts, take out the largest piece and cut it in half, have a gander then add it back to the pan), add one more dose of water and reduce the temperature to medium low.   As soon as the water is boiled off, add the mashed potatoes and stir continuously until the potatoes are heated through.   They will pick up some of the juices from the pan, turning them a light tan color.   
As soon as its hot enough, dump the whole mess into a bowl and eat :)

It looks ugly as hell, but its good - its cheap - and its filling.   Best of all, you dont have many dishes to clean.
